From the icy reaches of Canada to the breathtaking coasts of Argentina, you won’t find a more delicious oyster.

Our oysters are grown using the most advanced gear. Our floating cages suspend French vinyl mesh baskets high in the water column where oysters can feed on water rich with phytoplankton at the top of the water column. The cages are designed to be flipped when filled, giving us the ability to dry the oysters periodically to assure shell quality and muscle strength. The floating cages we use are made right here in the Carolinas. The floats are made in North Carolina, and the aluminum cages are manufactured and assembled in South Carolina by other farmers. 

We purchase tiny, individual baby oyster seed, called “spat.” We only buy from local shellfish nurseries, where we pick up our spat and bring them back to their new homes further down the coast. We place the spat into fine mesh size bags, which we then place into the floating cages. As the oysters grow larger, we continually grade and separate the oysters into bags with larger and larger mesh sizes until the oysters are ready for market, drying them periodically to mimic the most advantageous tidal positions for oyster growth as best we can.

The classic Stump Sound oyster from the pristine, briny bay behind Topsail Island that made this grow region of North Carolina famous far and wide. These oysters are plump and salty, spending a lot of quality time floating on the Stump. Soundside Salts are around 3.5 to 4 inches, and can be amended depending on our customers’ specifications and availability. Please send me a message if you have any questions. A premium, single oyster that has briny, buttery, and umami flavors from the heart of Stump Sound in North Carolina,  the most revered oyster growing area in the region. Soundside oysters are delicious year round. And as a bonus from the middle of winter to the middle of spring, the oysters take on a vibrant shade of blue-green that comes from the seasonal bloom of Haslea ostrearia, a micro algae, unique to North Carolina’s waterways. The algae turns the gills of the oysters a unique color of teal, and the presence of the Haslea phytoplankton is biological proof of pristine waters, which is the only habitat in which they thrive.


Stump Sound Roses

The Stump Sound Rose is our magnum opus for the oyster bar. In the beginning days of the farm, a friend found us a great deal on an old 90s Jon boat with a barely used two stroke motor. Both my friend and I were living on Rose Avenue, so I named her Rose. She is still the flagship of the fleet, now and forever.

Stump Sound Roses are deep-cupped, meaty oysters for their size. They are raised specifically for the raw bar and selected by hand. Stump Sound Roses are typically between 2.5 and 3 inches. Throughout the oysters' lives, we air dry them twice a week, mimicking the natural tide cycle, to make the oysters’ abductor muscles stronger and hardens the shell, which leads to better meat, longer shelf life, and pretty, shuckable shells. Stump Sound Roses also continually feed in the top of the water column where they grow in the sound, never touching the bottom, so the liquor is clear and delicious.

We’d confidently put them in a taste test and shucking contest with any oyster from any coast in North or South America, from the arctic reaches of Canada to Tierra del Fuego on the Argentine Coast.
